American-born Clovis Young grew up eating Mexican food in Southern California from a young age. After various holidays to Sydney to visit his wife's Australian-based family, he noticed that Mexican food just wasn't up to the standard it should be.

"Initially I looked at the US, but it was too competitive to start a business, whereas Australia had a gap in the market," says Young.
